We love grilling meals in the summer. Warm summer nights, great burgers, seafood, chicken, veggies on the grill. A simple easy dinner with just you and your honey or a fun meal with family and friends. It is a naturally casual way to dine and relax. All you need is a good grill, a simple easy light recipe, some cold beverages iced down and you’ll got the perfect setting for a great, leisurely evening.
We thought we’d give you a great menu for a summer evening with family or friends. This is one of our favs. It’s easy to prepare, healthy and everyone enjoys it.
- *Grilled Chicken Breasts Stuffed with Goat Cheese, Sun-dried Tomatoes and Basil
- Grilled Asparagus
- A fresh, green salad with your favorite vinaigrette dressing
Grilled Chicken: Serves two – This recipe was originally designed for two; all you have to do is multiply it by the number of people you plan on serving.
- 2 grilled breasts – boneless & skinless
- 1 – 8 oz. log of goat cheese – keep refrigerated until ready to use
- Unflavored dental floss (for slicing goat cheese)
- 4 fresh basil leaves
- 4 – 6 sun-dried tomatoes in olive oil
- 3 TBSP olive oil
- 2 TBSP freshly squeezed lemon juice,
- Salt & pepper
Split each chicken breast to create a little pocket in which to stuff. Slice goat cheese into 1/4 inch slices (using floss for slicing) – 2 to 3 slices per breast. Drain and set aside two sun-dried tomatoes per breast. Set aside 2 basil leaves per breast.
Now you are ready to assemble:
Take each chicken breast and stuff with 2 to 3 slices of goat cheese (depending on size of pocket), add two basil leaves on top followed by two or three sun-dried tomatoes.
Once breasts are stuffed, seal them with tooth picks or small skewers so that they stay closed while grilling.
Place them in a baking dish and drizzle with 3 TBSP of olive oil and 2 TBSP of fresh lemon juice. Then season with sea salt and fresh ground pepper. Cover and let marinate for 1/2 hour before grilling.
Asparagus: Serves 4 – While chicken breasts are marinating, prepare the asparagus:
- 1 bunch of fresh asparagus
- Lemon pepper and sea salt
- 2 – 3 TBSP grated parmesan cheese
1 – 2 TBSP Olive oil
Rinse and trim asparagus. Place in a dish and drizzle with olive oil. Season with lemon pepper. Let sit until ready to grill.
Heat grill to medium and place breasts on grill. Cook 10 minutes and then turn over to other side. Add asparagus to grill (medium temp is good) and allow to cook as breasts finish – approximately 10 minutes. (Remember – chicken should register 165 degrees when done.) Remove chicken and set aside to rest for 5 minutes, covered on a serving platter. Allow asparagus to cook to desired doneness, if needed. Remove asparagus to platter and sprinkle with 2 TBSP of grated parmesan cheese. Now you’re ready to eat! Serve with a fresh green salad and your favorite white or Rose wine. Bon Appetit!
